It’s another TACO TUESDAY!

And I have just the taco recipe for you! These super simple skirt steak chimichurri tacos are sure to become your new favorite. It’s so simple and calls for very few ingredients.

The first thing you are going to need to make is your chimichurri sauce. If you are anything like me, you always have cilantro on hand. I put cilantro in a lot of my dishes. It’s hands down one of my favorite herbs. HANDS. DOWN.

Homemade Chimichurri

In a food processor, combine a whole bunch of cilantro, (and by bunch I mean the one sized bunch you buy at your grocery store) 3-4 cloves of fresh garlic, 3 small fresh jalapeno’s, the juice of one whole lime, a pinch of coarse sea salt, 1/3 cup of olive oil, and 1 Tbsp apple cider vinegar. Blend on high until you get your desired consistency.

*I did remove the stems from my cilantro because it helps take away the stringiness that can happen when you do not. I, however, did not remove the seeds from the jalapeno’s. It gives it a kick and saves you from burning your hands.*

Things you can sub; Cilantro – parsley, lime – lemon, jalapeno’s – red pepper flakes, apple cider vinegar – any vinegar.

Easy 5 ingredient chimichurri sauce

Skirt steak is one of the easiest and mess free cuts to cook, in my humble opinion. No need to bake, check the temps, or prep the grill. You can simply cook ‘er up on a good ol’ fashioned skillet. Any will do, I recommend cast iron for the best flavor. Season with just salt and pepper, or get wild like me and season generously with garlic powder, s & p, and lime flakes. Sear your cut on both sides 2 minutes per pound on med-high heat in a well oiled pan. This will get your cut medium to medium well. If you have an unusually thick cut add a few more minutes to each side. After you sear your skirt steak, let it rest for at least 10 minutes.

After you’ve given your uber tasty steak time to rest, you can cut it into strips or cubes, however you fancy your tacos. I like them in meaty strips. I then drizzle the chimichurri goodness all over the top. Scoop it into a freshly fried corn tort lightly buttered and top with some fresh homemade pico de gallo.
