Savory Greek Chicken Kabobs
I am always on the hunt for a new tasty summer grill go-to. Lately we have been loving our local Greek restaurant, Greek Island Grill. But we all can’t order out every dang day. So, I hit the cupboards in search for a great Greek seasoning. I have finally come up with a great Greek seasoning and a chicken kabob I’d be willing to write home about. I am going to share both my Greek seasoning and my fav Greek chicken kabob line up!
I am seriously always on the hunt for new and tasty recipes. And on top of that, ones that are quick and kid friendly. We love this local Greek place Greek Island Grill, and after a few experiments in the kitchen I found a great Greek seasoning spice blend that is going down in the Radish Mama books! I am here to bring you a easy one Greek chicken kabob meal to your dinner arsenal, all while you sit back and feel good about serving up a savory and healthy dinner.
Ingredients:
- 1 lb Diced Chicken breast
- One Yellow Pepper Diced
- One small container cherry tomatoes
- 2 Large Zucchinis
- 1 Large cucumber
- 1 tbsp. lemon juice
- dash of salt
Combine all spices and add to 1lb of diced chicken breast. Add either an additional splash of fresh squeezed lemon or 2 tbsps of EVOL. Marinade for at least 20 minutes. Dice all veggies and layer veggies with diced seasoned chicken on skewers. I normally use metal, but also use bamboo.
Greek Seasoning
2 Tbsp kosher salt
2 tsp dried basil
4 tsp oregano
1 tsp thyme
4 tsp garlic powder
2 tsp dill
2 tsp pepper
2tsp parsley
2 tsp rosemary
1 cinnamon
1 tsp nutmeg
After meat has marinaded, grill on medium heat for 8-15 minutes on medium, carefully turning. Make your Tzatziki using this recipe HERE.
