Be the Hostess with the Mostest – Easy Lasagna Bites – Perfect game day appetizer
I honor of Super Bowl LI, here is an easy game day snack. These easy lasagna bites appetizer is always a crowd pleaser. But for the sake of realness, I will not be watching the game. I am one of those wives that casually strolls in to see some of the commercials, but otherwise is browsing my favorite online shops. Reading up on new recipes, or in gulped in a good blog post. Thank you internet for keeping me forever entertained.
As a foodie, regardless of loving football or not, I always want to keep the people happy with easy, tasty snacks. I can be a bit of a procrastinator, and was able to throw this simple treat together quickly. So that’s a WIN for me too!
To get started you’ll need the following ingredients:
Pizza Crust
Ricotta Cheese
Pizza Sauce
Sun dried tomatoes
Italian seasoning
2 tbsp. butter
Cooking spray
XL Cookie Sheet
Start by rolling out your pizza dough, in my case, I used two crusts. Using a pizza slicer to cut each pizza sheet into fourths both directions. Obviously, I didn’t cut them very evenly but that wasn’t an issue in the end.
Next, add a small spoon full of pizza sauce, ricotta cheese, and sun dried tomatoes. Be sure you leave enough room to close the dough. If you don’t things can start to get real messy.
After you’ve added all the stuffing to your dough squares, bring the sides of the dough together and form into a closed ball. (I turned them upside down so they looked better once baked.)
Once you have all the lasagna bites rolled into these tasty lumps of goodness, melt down your 2 tbsp.’s of butter and add some Italian seasoning. Coat each lasagna bites with your butter mixture and place them in the oven at 425 degrees for 15 minutes.
Use your remaining pizza sauce as a dipping sauce. This easy lasagna bite recipe is always a crowd pleaser! You can also make these in the morning on a slightly larger scale and send them in the kids lunches. Big hit!
They were delightful! I wish you had made more of them!!
