Easy Pound Cake

Egg yolk pound cake

If you follow me on social media you know that my daughter just had a birthday and requested Angel Food Cake. One of my favorite cakes to make, I use this recipe HERE. Then I end up with 12 yolks to put to use. So this week I worked on a egg yolk based pound cake recipe and I gotta tell ya, it’s a winner. Read more

Evening chores on the homestead. Odin is doing great with his daily training and I hope to keep that momentum going. In the evening I head out and feed in order; papa pig, bucks, general population herd, mama pig and piglets, then free ranging male piglet (new addition) and ducks. The Boss took care of new male pig and ducks tonight so that is always a nice break. Brooks takes care of the watering for everyone and he also collects the eggs and helps me when I head out to milk the goats. Bennett does the morning feeding. It’s definitely a group effort.
I had a very late start to my summer garden and that’s totally ok. I missed the mark on some summer staples but I will still get by. Last week was brutal. We lost some livestock and a kitten and I didn’t complete some tasks I set out to. So I felt the weight of my shortcomings. It happens. I understand that I cannot control everything and I accept that. So everyday I choose to focus on my successes. What did I pull from the garden, what did I make from scratch in the kitchen, was I able to sell any homestead goods?!? Is my family fed and able? Do I live comfortably under a roof. I choose to focus on what I AM able to achieve. That frees me of the burden of hard times.
Happy Friday! As you can hear, the ducks are cheering on the piglets they put their money on! Snoop duck, leader of the duck gang, is still taking bets on our piglet ring! So get your bets in early and may the best piggy win! The arena this season is much larger so it’s anyone’s guess!
And in true homestead fashion, things happen. We lost a piglet yesterday who was only one week old. After careful review we believe mama accidentally crushed her baby girl. These are the kinds of accidents that CAN happen. Regardless of how attentive you are, or how amazing your setup is. As sad as it is, we have to move on. I was super saddened by this little females loss, not just because she died, but also because she was big and had beautiful markings. She would have made for a great breeder. Of course we don’t know the actual cause of death but came to our own conclusion based off our experiences. Losing livestock can be sad but is certainly a part of this life. I will continue to heavily monitor our piglets and mama as they grow, especially in the increasing heat.
Happy Mother’s day to all forms of mamas out there. I love being a Mother but I don’t want that to be my defining title. Before I was a mother I was a strong young woman. I was a fighter and a survivor. I became a woman first out of necessity. I can’t say I loved her first, I loved being a Mother first. And as I continued to grow as a Mother and as a woman I learned to love that brave young woman. I gained an appreciation of her and at times I wish I could go back in time and be her friend, learn from her and also be her mentor. Now, I have come to a place where there is no singular defining part of me. I am many things, including a mother. I want my children to know you are more than one thing. You’re not your job, you’re not your friends, you’re not your children, you’re not your spouse. You are 100% genuinely YOU and that is a beautiful divine right that NO ONE can take from you.
My son and his beautiful girlfriend came by for a visit yesterday. They played with the piggies and we made rice paper wraps and some quick sushi. Oh and also guacamole with the extra avocados 🥑. They actually put the guac in a few sushi rolls. 😂 Maybe they’ll start a new fusion trend. I sent them home with some fresh chicken and they made Masman curry with it! Looks pretty delicious! Always happy to share cooking and goodness with family. Love that they came by and even wanted to milk the goat, maybe not so much my sons but they still got the job done. How do you think their curry looks?!? 🔥
